Spectacular No Bake Cookies

Since giving up (or reducing substantially almost to none) my intake of white sugar and embarking on my Macrobiotic journey, I've noticed a significant decrease in my cravings for sugary treats.  Apples and oranges often fulfill any want for something sweet, but the occasional luna bar, coconut milk ice cream, rice dream pie, vegan cupcake, or some sort of cookie do the trick and are great options when dessert is calling.

Sunday evening I had a major craving for something sweet.  Well I bought a rice dream pie and it was everything I desired.  If you haven't had one, I highly recommend giving one a try.  My favorite is the mint pie, but they only had vanilla at the store and that was delicious as well!

Now, next time I have a craving for dessert, I figured rather than running out to the grocery store spur of the moment, it would be nice to have that something sweet in the freezer.

Here is a No Bake Drop Cookie recipe I found in The MILF diet.  I got 12 large cookies from this recipe.  They are fantastic!


Ingredients:

2/3 cup maple syrup
1/2 cup safflower or sunflower oil
5 tbs unsweetened cocoa powder
1 tsp ground cinnamon
1/2 cup peanut butter
1 cup rolled oats
1 tsp vanilla extract


1.  Over medium heat, combine maple syrup, oil, cocoa, and cinnamon.  Boil for 3 minutes, stirring constantly.

2.  Remove from heat and stir in peanut butter, oats, and vanilla until blended.

3. Drop spoonfuls onto waxed paper and chill in freezer for about 30 minutes.

4.  Store in freezer (if you don't eat them all up!)

Last night, I used 1/3 cup maple syrup and 1/3 cup brown rice syrup instead (saving my maple syrup for Saturday pancakes!)  Also, I only had quick oats, but they did the trick.  I also did not have any vanilla in the house.  I was thinking adding flaxseed would have been a nice addition - next time!  My cookies were more ball shape so they didn't quite look like cookies, but I suppose that doesn't matter!

  2. These look delicious! I have made them before with coconut oil and it makes them very good! My favorite sweet treat right now is Justin's Chocolate Hazelnut butter! mmm...

  3. I'll have to try these! I have made raw cookies before with almond or sunflower seed butter and oats as the base for them. The ones I made had dairy free chocolate chips and flax seed in them as well. I've got some unsweetened coconut that I could put in them also! If you like coconut, give that a try!

  4. These sound awesome! I love the idea of leaving them in the freezer to grab one when I get a craving.
    I've never had a rice dream pie... or even seen one - I'm intrigued. I'll be on the lookout (although, I too am trying to avoid sweets).

    I'm glad you saved some of your liquid gold (aka maple syrup) for pancakes. My maple syrup is almost done, and I might cry. Luckily there's a maple syrup festival in town this weekend, and I will drag the husband there even if I have to bug the heck out of him hahaha
